Neapolitan pizza is best just after baking. For takeaway, however, it continues to change in the box: steam softens the dough and the cheese cools. Good reheating must restore heat and some firmness without unnecessarily extending the bake.
Covered frying pan: the most precise method
The pan heats the underside directly while the lid retains enough heat to melt the cheese. It is ideal for one or two slices.
- Preheat gentlyUse a dry pan over medium heat.
- Place the slice in the panLet the underside regain firmness for 2 to 3 minutes.
- Add a few drops of water beside itNever on the pizza: steam helps the cheese relax.
- Cover briefly30 seconds to 1 minute, then serve immediately.
Oven: ideal for several slices
Preheat the oven to around 200–220 °C with a tray inside. Then place the slices on the hot tray for a few minutes. Contact with the heated metal helps the base regain firmness.
Watch closely: pizza is already baked. Ten or fifteen minutes would dry the cornicione and harden the cheese. Depending on thickness and oven, 4 to 7 minutes are often enough.
Air fryer: quick, but watch it
An air fryer can reheat a slice very well in 2 to 4 minutes at around 170–180 °C. Air circulation heats quickly but can dry the edges. Start short, then add time in 30-second steps.
Microwave: useful within limits
The microwave quickly heats water in dough and topping. Pizza becomes hot but often soft, then rubbery as it cools. For speed, use medium power briefly and possibly finish in a pan.
Before reheating: take the pizza out of the box
Never put the cardboard box in the oven unless the manufacturer explicitly says so. Place the pizza on a plate, tray or pan. If it has just been delivered and is only slightly cool, a few minutes in the open air may be enough to release excess steam.
Reheat safely
Pizza kept for later must be chilled quickly, within two hours of the meal, and stored in a closed container or properly protected. The coldest area of the refrigerator should remain at 4 °C or below.
For leftovers to be eaten hot, ANSES recommends an internal temperature above 70 °C. Reheat the pizza until the centre is fully hot, especially if it contains meat or cured meat.
Frequently asked questions
Should oil be added before reheating?
It is generally unnecessary. Pizza already contains oil and cheese fat. Adding more may weigh down the base.
Can pizza be reheated twice?
It is better to reheat only what you will eat. Repeated cycles damage texture and make time at room temperature harder to control.
Does a frying pan work for a whole pizza?
Only if it lies flat and can be covered. For a whole pizza, the oven is more even.
