The wood-fired oven is often presented as a flavour argument. In reality, it is above all a demanding baking system. Flame, embers, floor and dome transfer heat in several ways, and the pizzaiolo must read them constantly.
What is the role of the wood?
Wood produces the flame and embers that heat the mass of the oven. A suitable species must burn steadily, provide stable heat and avoid unwanted smoke. The wood must be dry: damp wood uses energy to evaporate its water, smokes more and makes temperature control harder.
The aroma of wood can contribute to the aromatic atmosphere, but the pizza remains in the oven for only a very short time. Its character comes mainly from intense heat and clean combustion, not from prolonged smoking.
Three forms of heat transfer
Success depends on balancing these three contributions. A floor that is too hot burns the underside before the top is ready. A dome that is not hot enough requires a longer bake and dries out the dough.
Why do people talk about approximately 485 °C?
The Pizza Napoletana TSG specification indicates around 485 °C on the oven floor and 430 °C at the dome. These are traditional reference points, not an automatic setting. The actual temperature varies with the area of the oven, the pace of baking and the measuring method.
The pizzaiolo therefore watches how the dough reacts: the speed at which it rises, the colour underneath, the melting of the cheese and the development of the cornicione. A thermometer helps, but it cannot replace experience.
Why only 60 to 90 seconds?
At very high temperature, the surface of the dough colours quickly while steam inflates the cornicione. Baking ends before the inside has lost all its moisture, which explains the tenderness of the result.
Going well beyond this time in such a hot oven would burn the pizza. Taking it out too early, on the other hand, would leave the crumb insufficiently set and the topping too cold.
Why must the pizza be turned?
The side close to the flame receives more radiant heat. The pizzaiolo therefore lifts the pizza slightly and turns it for even baking. The European specification describes this movement precisely and recommends keeping the pizza on the same area of the floor to avoid excessive temperature differences.
The turn must be quick and delicate: too early and the dough may deform; too late and the exposed side will burn.
The oven changes during service
Every pizza locally cools the oven floor. During a busy service, some areas may lose energy while the flame remains strong. The pizzaiolo moves pizzas, adds wood and sometimes allows an area to recover.
Does a wood fire always give a smoky flavour?
No. Clean combustion and a very short bake should not leave a heavy smoky taste. Wood fire mainly brings a distinctive heat dynamic, rapid colouring and the spectacle of a living flame.

Not in a very hot Neapolitan oven. The right time is the one that cooks dough and topping without drying or burning them.
Are all areas of the oven at the same temperature?

Can gas reproduce the same result?
