Why is Neapolitan pizza dough soft?

The softness of the centre is one of the most surprising features of Neapolitan pizza. It comes from a balance between water, gluten, fermentation gases and very rapid baking.

Soft pizza may seem strange if you are used to a very crisp base. Yet this tenderness is sought in the Neapolitan style. It should allow the pizza to fold without being soggy, sticky or underbaked.

Water remains in the dough

Pizza dough contains water that flour absorbs and partly retains. The longer the bake, the more water evaporates and the drier the dough becomes. In a very hot oven, pizza bakes before losing all its internal moisture.

This short bake keeps the centre tender. Hydration is not a race for the highest number, however: it must suit the flour, kneading, fermentation and oven temperature.

The gluten network provides elasticity

When flour and water are mixed and kneaded, wheat proteins form a gluten network. It traps fermentation gases and allows the dough to stretch. If too weak, the dough tears; if too tight, it springs back and is difficult to open.

Fermentation gradually softens the dough

Over time, fermentation produces gases and aromatic compounds. Enzymatic transformations also change the dough. Correctly managed, it becomes easier to open and develops more flavour.

But fermentation that goes too far can weaken the network. Dough sticks, spreads too quickly or no longer retains gases. Soft dough is therefore not dough abandoned for the maximum number of hours: it is used at the right moment.

Hand stretching preserves the contrast

The pizzaiolo flattens the centre with the fingers while leaving the rim relatively untouched. A rolling pin would compress the dough evenly and expel much of the gas. Hand stretching therefore creates two zones: a thin, soft centre and a thicker, airy cornicione.

A lightning-fast bake sets the structure

In the oven, heat expands gases and turns water into steam. The cornicione rises while the centre sets rapidly. High temperature colours the surface without completely drying the inside.

The Pizza Napoletana TSG specification describes a tender, elastic and easily foldable pizza, traditionally baked for 60 to 90 seconds at around 485 °C on the oven floor.

Why does the dough soften further in a box?

Hot pizza releases steam. In a closed box, the steam condenses and moistens the surface. The effect is especially visible on already tender Neapolitan dough. It is therefore best eaten quickly and the box should not remain closed too long.

Frequently asked questions

Is more hydrated dough always better?

No. High hydration can create light dough, but it also increases difficulties in kneading, stretching and baking. The right level is the one the pizzaiolo controls.

Why does the tip of the slice droop?

The centre is thin, soft and covered with a moist topping. Slight bending is normal in the Neapolitan style.

Can this softness be achieved in a domestic oven?

You can get close, but the lower temperature generally requires a longer bake, which dries the dough more.
